CALLING ALL ITALIAN FOOD LOVERS
Our most popular course is our weekly Tuscan cookery course where you will learn essential ‘Italian kitchen’ skills that range from making pasta and breads to Tuscan roasted meats and risotto, biscotti and gelato.

Overview:
Guests arrive on a Sunday and are welcomed with a traditional slow Tuscan lunch. The remainder of the day is free to unpack, settle in, explore the estate’s grounds, take a swim in the outdoor pool, or just relax whilst waiting for dinner to be served.
From Monday to Friday the daily schedule is a 9.30am breakfast with lessons starting at 10.00am.
Our lessons are hands on and they generally last for three hours or more. Classes are small and we make use of high quality local, fresh, and seasonal ingredients.
Essential Tuscan techniques you will master include: fresh homemade pasta, raviolis, gnocchi, pizza, focaccia, risotto, bruschette and crostini, roasted meats, fish and meat preparation, pastry dough and desserts, biscotti, ice creams and sorbets, vegetable and grain soups and much, much more!
Lunch is generally served at around 1pm and you should be prepared for lunch Tuscan-style – a leisurely affair with plenty of good food and conversation.
At 3pm our English speaking tour guides will pick you up and introduce you to local treasures such as Lucca, Pietrasanta, a marble studio, Forte de Marmi, Pisa, Lake Massaciuccoli, and of course, our local Viareggio food market.
Dinner is served every night at 8pm and it consists of several courses, mainly prepared by your chef instructors. Each course is paired with excellent wines.
Your Tuscan experience with us reaches its climax on Friday night at our Graduation Dinner where you receive a diploma certifying your newly acquired status as an ‘Authentic Tuscan Cook’ or Vero Cuoco Toscano.
